I have been craving chocolate cake all week. Everytime I want some it seems the most inappropriate time to make it but tonight before anything else I have my apron on and music is ready to go!
I love baking and working out how I’m going to present my goodies is all part of the fun. However for this cake there is no time for prettiness. It’s the all in, grab a spoon (a big spoon) kind of cake.
I found this recipe one night when I was desperate for cake and had hardly any ingredients in the house. It is quick and most importantly delicious! I use this recipe for all chocolate cakes now and have even frozen it but lets be honest, there is hardly ever a time when there is enough left over to freeze.
1 1/4 cups flour
1 cup sugar (you could use less)
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp apple cider vinegar
Of course do the usual and pre heat your oven to around 180 degrees then mix together the flour, sugar, cocoa, baking soda, and salt with a fork, making sure it is really well mixed. Follow it with the water, vanilla, oil, and vinegar, and again, give it a good mix. Pour into your baking dish of choice and do your very best to wait for 30 minutes before it’s ready to eat!
At times when I have been very bold I have made rich buttery chocolate icing and lathered the cake with it or ate it hot with ice cream. With chocolate cake you might as go all the way! Enjoy.
